• Ingredients
• 10 1/2 ounces sea salt / 300 g
• 1/3 cup firmly packed brown sugar / 60 g
• 8 juniper berries, crushed
• 2 teaspoons black peppercorns, crushed
• 2 fresh bay leaves, torn
• 1/2 teaspoon quatre épices
• 2 1/2 pounds boneless pork belly, with skin / 1.2 Kg
• Directions:
• 1. In a small bowl, mix the salt, sugar, juniper berries, peppercorns, bay leaves, and quatre épices. Rub all the surfaces of the pork belly with the mixture. Sprinkle a thin layer of the salt mixture in a glass dish, and place the pork belly on top, skin side up. Sprinkle the pork with a little more of the salt mixture, setting aside any that remains. Cover the pork with plastic wrap and refrigerate for 2 days.
   
  2. Remove the pork from the refrigerator and pour off and discard any liquid in the dish. Turn the pork over and rub with the remaining salt mixture. Cover and refrigerate for another 2 days.
   
  3. Rinse all the salt mixture off the pork and dry well with paper towels. Wrap the pork in cheesecloth and store in the refrigerator for up to two weeks.
   

Ingredeints 

• 1 Cup Fine Ground Corn Meal
• 1 Cup Self Rising Flour
• 2 teaspoons Baking Powder
• 1 teaspoon Salt

• 2 Eggs
• 3/4 Cup Buttermilk (Milk with 2 tsp vinegar can be substituted)

• 1/3 Cup Water
• 1/4 Cup Butter, melted

• 1/2 Cup Palmetto Cheese - Original, Jalapeno, or Bacon    
• Oil for frying
• Recipe 

In a mixing bowl, combine all dry ingredients and mix together.In a separate bowl, combine all wet ingredients except for the Palmetto Cheese and Oil and mix those together.Add the wet ingredients to the dry and stir until combined.Mix in the Palmetto Cheese.Heat oil in a pan over medium heat.Add two tablespoons of the batter to the heated oil.When golden brown, flip over onto the other side and cook until golden brown. It's always good to test one take make sure they are completely cooked.

Dear Millicent,

                   The war has gone to hell. After the Union forced nearly one-third of us to surrender at Vicksburg everyone just about gave up. Every soldier left knows Lee is just grasping at straws, trying to save face. Are you guys ok? I heard that damn Sherman has been running through Georgia destroying everything in his path. I've never seen a more dishonorable move in warfare than attacking innocent civilians. Let me know as soon as you get to safety.

blog post 2 (little late oops)

I am reading the book columbine and it amazed me how wrong the media was. Any rumor or anything was reported in volume and most were remotely untrue. Media slip-ups kept spiraling and spiraling down seeming to get worse. Although the media slipped up the eventually got it right.

I think mr Griffins ettempt to change his skin color to find out about the other side of segregation will help open people’s eyes but will hurt Griffins reputation. I also feel like Mr Griffin should have changed his name especially since some one already noticed his name almost giving him away.

     The main character of Invisible Man feels that world that surrounds him is racily diverse but racist because anyone that isn't white is treated poorly mainly the African Americans and there isn't that much being done about the problem yet so people just suffer and let things happen that shouldn't be happening because if they were to try to do anything to stop the racism they would be severely punished.

     In the book Invisible Man the main character asks to deliver his speech but is forced to participate in a blindfolded battle royale against his fellow Negros. After this he is awarded the right to deliver his speech and ends up getting a scholarship to an all black college. During his first year he meets Mr. Norton, a founder of the school, and drives him around for a day. They decide to visit a man named Trueblood who tells a story. During the story Mr. Norton feels ill and the narrator rushes him to a bar to get a drink for him. 

I am Juliette and I read The Help. My favorite character in The Help is Skeeter because she seeks to write and speak out about racial prejudices black people face. She had a lot of courage because she was shun by the white community because of her activism. She also is hardworking. She pitches her book and ideas to many publishers but must deny her because she is a woman and they don’t believe in what she is writing about. Also she has a trust fund but she doesn’t embrace the predjuces that the upper white class has against black people. She chooses to break from the social norm takes many risks as a white woman in the south

In the book black like me , in the book recently the guy griffin gets treated like trash because there are things black people people can't do it is not fair to griifin even though he was white. They kept on staring at him with the evil eye with racism . He keeps looking for a job , but never finds one . All Along he needs to be respective . He never gets a job because they don’t think griffin is educated Enoch to have one.

Invisible Man Comment #2

The way Invisible Man is slowly losing his optimism for people towards the end of the book is kind of disheartening. He has been let down so many times, and becomes cynical and suspicious of every person he comes across. Invisible Man feels undervalued and starts taking his frustration out on other people, which leads to his ultimate downfall in society. 

Black like Me: Zoey Benali

Hi, I'm Zoey _(┐「ε:)_ ! I'm reading Black Like Me. During the Socratic, we noticed that it was hard for black people to find a job because people assumed that they were not educated and skilled enough to do anything and flat-out rejected them before they gave them a fair chance. Some black people did not even get jobs because they didn't get any opportunities to get educated in the first place. So it became a cycle of not able to get an education, not getting to collect all the skills that are valuable for later in life, and then not being able to provide enough money for their child's education.

        Hello this is Abby, The Help is a heart touching and very informational book. Mae Molly is the daughter of Miss. Leefolt. Miss. Leefolt does not pay a single second of her attention to Mae Mobly. Instead Aibileen, their maid, take care of her. Aibileen is basically her mother figure. I feel sorry when Mae Mobly gets in “trouble” by Miss. Leefolt and then her mama slaps her on the back of the legs, even thought she did nothing wrong. All Mae Mobly wants is for her mother to pay attention to her and spend time playing with her. When Aibileen was teaching Mae Mobly how to use the toilet, she taught her on the bathroom in the garage (the colored people bathroom). Aibileen couldn’t use the toliets inside the house. So when Miss. Leefotl saw Mae Mobly trying to use the colored people bathroom she got angry and blamed it on Aibileen. Abileen could not teach her anywhere else though  because she wasn’t allowed to use the inside bathroom. Miss. Leefolt is so mean to Mae Mobly and Aibileen. I think Miss. Leefolt should obviously pay more attention to Mae Mobly and try to be a better mother to her.

I am Sebastian Trejo . I am reading black like me. John howard griffin turns himself into black with chemicals by the doctor. He gets cheaked every week about what the chemicals did to him . After he turned black from white he shaved off all his hair , got out from his house and went on the bus to go to the deep south. He got of from the bus to the hotel. Later on he tries to find a job but is having a hard time finding one . He has been racial descrminizedwhen he try’s to sit on the bus where the white people sit. It is very bad because of all of what the south does.

At the end of Columbine, the author, Dave Cullen includes pages from the boys personal journals in the back. Eric had multiple pages of sick and twisted fantasies, including rape fantasies and a dream existence in which he wiped out mankind and lived in seclusion. He had a variety of these fantasies and made it a hobby of telling girls in online chat rooms about his fantasies. The problem was, his fantasies couldn't just stay in his head, after they had festered for years he most likely felt the need to act on them which ended in disaster.

Gabriella Starlin -- Columbine

I am Gabriella and I am reading Columbine
Columbine is a very eye opening book.
It talks about the events that lead up to the first major school shooting, at Columbine High School.
The book goes in thorough detail of some thoughts why Eric and Dylan committed the shooting.
There are also many pictures of the drawings in their journals.
The boys seemed so happy, it was surprising to me when i found out it was them who killed so many innocent people.

A long way gone

In my book," A Long Way Gone" the main character in my book is Ishmael who is a child who was caught in the war while just being a spectator. The enemy who is destroying the villages are rebels who force children to join their side. Because of this many adults are afraid of this they are cautious and make a stereotype from children thinking that they are rebels. Whenever Ishmael goes into a village 2 things usually happen. Most of the time the village is abandoned because they hear rumors of children coming to their village. Because of this stereotype, many people assume children to be rebels which leads to panic and people leaving the village. On the other hand, there can be a ton of soldiers ready to take the "rebels" to be questioned either to be released or to be killed.

i am reading Columbine, right now the police are explaining the community what is going on. Most of their information is just conspiracy so none of it is really true. Families are completely broken... This was the first major shooting, it caused lots of damages and because of Erik and Dylan lots of schools are being affected and there has been lots of attempts to attack a school. For example not so long ago there was a shooting in parkland, Florida, there were 17 deaths. People are doing nothing to prevent these tragedies, and more and more schools are getting damaged.
Dylan and Eric left journals explaining their plans, reasons, they had pipes that were supposed to be used for the bombs, they had been planning this for 2 years. Eric started his journal before Dylan (3 months)

Neena Lester
In the novel I Hunt Killers the main point of the story is that Jasper Dent is trying to prove that he us not a serial killer like his father by helping out with the murder of Jane Doe. However, while trying to solve this case he starts convincing people and himself that he might actually turn out to be just like his father. Jasper's fathers voice in his head and killer instincts cause him to almost do horrible things, like strangle a women.   

Jake L- Huck Finn #2

Hi, this is Jake and I'm reading Huck Finn.  during the Socratic seminar, we were talking about discrimination and in my book, when Hucks dad found out that black people could vote, he kind of blew up and ranted on and on about how that was wrong and how he was never gonna vote. right before we were about to change the subject, Ashley asked for any examples of discrimination that weren't racial, which made me remember this one part where when Hucks dad finds out that huck is educated and can read, he also goes off and says that he hates huck because he thinks that he's better than his dad because he can read. I'm not exactly sure if that's discrimination but I think it can connect to it a little.
